Every day of Pancake Week has its own name and is necessarily accompanied by a feast with pancakes:

Spring is approaching, and with it the Russian national holiday called Maslenitsa. She is very fond of the Russian people and has firmly taken root in our history, since she has been met for more than one century. The essence of Maslenitsa is the end of the cold winter and the long-awaited arrival of warmth. The people welcome spring with joy. Pagan ancestors idolized the sun god Yarilo and even made sacrifices to him so that the warmth would come faster and the snow would melt from the fields. In our time, some of the traditions are still observed. In cities, in the central squares, mass festivities are held with songs, dances, and at the end of the celebration, as in the old days, a scarecrow of winter is burned. The Orthodox faith does not prohibit doing this. Although the church accepted this holiday, it filled it with innovations. Each day of Shrovetide week has its own meaning:

matchmaking took place on Tuesdays. The young people got to know each other, and after Easter they played a wedding;
on Wednesday, the sons-in-law go to the mother-in-law for pancakes. The richer the table, the more the hostess is pleased with the guests;
on Thursday we already met Maslenitsa with might and main: we rode the hills, sang, danced, had fun;

They began to prepare for Shrovetide from the middle of the previous week. Maslenitsa week

Shrovetide began on Monday next week. For the entire Russian population, the next seven days were the most fun and favorite time of the year. The most important were the last four days of the holiday, which were called "wide" or "riotous Maslenitsa". Before them we washed ourselves in the bath in order to "cleanse" ourselves from the hardships and misfortunes of the past year. The houses stopped permanent job, began to visit relatives and friends.

Pancakes - a pagan symbol of the sun

On Shrovetide, abundant hearty tables were set from flour and dairy foods, as well as from eggs, fish dishes, pies, kvass, beer. Pancakes were always present in the festive meal - a pagan symbol of the sun and an obligatory attribute of commemoration.

In these days, class, property, and official differences were weakening. Little people, wanderers, beggars could be invited to the table. Going to each other's relatives' pancakes brought them closer together, gave them a convenient excuse to forget the grievances and discontent that had accumulated over the year.

The performance was timed to coincide with Shrovetide a large number ceremonies associated with honoring young spouses who got married this year. They were rolled in the snow, rolled from the mountains on frozen animal skins and sledges, and put on inverted harrows.

Everywhere, the main festive action was roller coaster rides - on sledges, pet skins, overturned benches, icy troughs and sieves. In the north and in the Volga villages, on high places, during the Shrovetide week, parallel poles were laid for young people to ride in pairs. Also, smart young people rode horses, moving from village to village with noise, songs and playing the accordion. At the same time, the horses were decorated with ribbons, flowers and ringing bells.

Seeing off Shrovetide

On the last day of the week, Maslenitsa was seen off in the provinces of Russia. In some areas, the ritual took the form of burning a Maslenitsa effigy, in others - in the form of a wire-funeral.

In the northern, central and Volga provinces, Maslenitsa on the last day of the holiday was burned on a special fire. The participants of the Maslenitsa train brought the symbol of the holiday or brought it on a pole immediately after the festivities and bypassing the village, closer to dusk. At the same time, all the accompanying people sang loudly, laughed and shouted. The procession participants often dressed in straw caps and caftans, which were also later thrown into the fire. Shrovetide could have various incarnations - in the form of a straw or wooden doll; a sheaf with a painted face, worn on a pole; pine or spruce branch, decorated with ribbons, scarves and bells.

The entire population of a given village or village took part in the burning of a Maslenitsa doll, but the main performer of the ritual was the youth.

Shrovetide today

Although by the nineteenth and early twentieth centuries, most of the rituals lost their ritual significance and began to be entertaining in nature, Shrovetide still symbolizes the border of winter and spring, a well-fed, cheerful life during the Maslenitsa week and asceticism, starvation and repentance of Lent.

The last Sunday before the beginning of Lent is called Forgiveness Sunday. On this day, after the evening service in churches, a special rite of forgiveness is performed, when the clergy and parishioners mutually ask each other for forgiveness in order to enter Great Lent with a pure soul, reconciled with all their neighbors.

The traditions of the Russian Maslenitsa and Lauyzganant in South Ossetia are significantly different. This is also an ancient custom, the main difference is that in Ossetia it is not so much a holiday as memorial days for the dead. They fall on Great Lent - on its second, third and fourth Fridays. On these days, Ossetians also bake pancakes (lauyzta), but lean ones - only from flour, water and sourdough. Usually they are served with garlic gravy, to which crushed walnuts and salt. Such pancakes, along with sweet boiled wheat or corn, are the main dishes of the funeral table.
