Composition:

* soda - 1/3 tsp

* raisins - 100 g

Preparation: To make a cupcake, first beat the sugar and eggs. Then add sour cream and vegetable oil there and mix everything. Put flour and soda in the dough. Mix the cake dough well.

We wash the raisins and dry them on a towel, roll them in flour. Add it to the dough and mix.
Lubricate the cake pan with vegetable oil and put the dough into it by 2/3 of the volume.

We cook the cake with raisins in a double boiler (45 minutes) or bake it in the oven for 30-35 minutes (we check the readiness with a wooden stick - if there is no dough left on it, then the cake is ready).

Cottage cheese muffins (for children from 2 years old)

Composition:

* sugar - 3 tbsp. l.
* soda - 0.5 tsp
* chicken egg - 1 pc.
* cottage cheese - 200 g
* millet flour. - 2 tbsp. spoons
* semolina - 2 tbsp. spoons

Preparation: Beat the egg with sugar. After that add the curd and stir. Then add soda, slaked with vinegar, semolina and flour, mix.

Lubricate the baking tins with oil and fill them with curd mass. We bake the cottage cheese muffins in the oven for 30 minutes (you can also cook them in a double boiler for 40 minutes). Delicious and light muffins are obtained, to which you can serve your kid a cherry compote or fruit cocktail.

Christmas cupcakes for children (from 3 years old)

Composition:

* chicken egg - 6 pcs.
* margarine (or better oil creamy) - 250 g
* sour cream - 500 g
* sugar - 1 glass
* millet flour. - 600 g
* nuts - 100 g
* salt - a pinch
* honey - 1 tsp
* soda - 1 tsp
* cinnamon - 1 tsp

Preparation: To prepare Christmas muffins, grind the margarine (butter) with sugar, add the yolks and mix. Add sour cream and soda, mix. Beat the whites and add them to the dough, mix. We drown honey, add cinnamon there and mix, add to the dough. Grind the nuts with a blender or grind them through a meat grinder.

Add flour, nuts and salt to the dough. Knead the dough well, it should be similar to thick sour cream.

Lubricate the curly forms with vegetable oil and put the dough in them. We bake in the oven until tender (the cooking time will depend on the size of the muffins, for not very large cakes it will be enough 30 minutes, for medium - about 45 minutes, and for large - about an hour).

Kefir cupcakes (for children from 1.5 years old)

Composition:

* kefir - 1 glass
* millet flour. - 400 g
* chicken egg - 1-2 pcs.
* soda - 0.5 tsp
* sugar - 1 glass

Preparation: Beat eggs and add soda, kefir, sugar, mix. Add flour and knead the dough well. Lubricate the tins with butter and put the muffin dough there.

We bring to your attention two recipes from the new book - children love to cook these sweet dishes, perhaps most of all.

A muffin is a small cake made from quick dough, always with the addition of something tasty. Most often, muffins are baked with berries or pieces of chocolate, but you can add any fruits, seeds, nuts and even candy, and the more the better.

You also need to add baking powder, otherwise the muffins will be too dense and sticky inside.

Experimentally, pastry chefs have established that the muffin dough must be kneaded as quickly as possible and in no case should it be uniform and smooth. To do this, mix dry and liquid ingredients separately, and then combine both mixtures, mix quickly, add, if necessary, the filler indicated in the recipe, and immediately pour the dough into baking tins. In the oven, the dough rises strongly due to the baking powder, which releases carbon dioxide when heated.

You've probably seen muffins in cafes or pastry shops: they are almost always sold in corrugated paper molds (capsules). This is good for both buyers (it is convenient to hold it with your hand) and for confectioners (no need to grease the molds). These paper capsules are easy to buy, but note that under the weight of the dough, they tend to creep and lose their shape. To bake beautiful muffins, paper molds are placed in metal or Silicone forms for cupcakes.

So, let's repeat the basic rules of working with the test:

  • mix dry and liquid ingredients separately;
  • do not forget about baking powder;
  • Do not knead the dough for a long time;
  • use paper capsules in molds.

Ingredients:

  2. Divide the paper capsules into the molds.
  3. In a large bowl, combine flour, baking powder, sugar and cocoa powder.
  4. In a separate bowl, combine the sour cream, egg, and melted butter.
  5. Pour the liquid mixture over dry and stir so that there are no white traces of flour (lumps will be). The dough will be quite thick.
  6. Spoon the dough into tins, filling 2/3 full.

  1. Place in a hot oven and bake for 25 minutes.
  2. Pierce one of the muffins with a match or a toothpick - it shouldn't have any wet dough sticking to it.
  3. Cool the finished muffins completely.
  4. For decoration, grease the muffins with melted chocolate and sprinkle with sugar balls.

These famous candies are made from two main ingredients - chocolate and cream, but any complex dessert will envy their popularity.

To make the truffles tasty and the ganache to harden well, try to follow my advice:

  • choose only high-quality chocolate with a cocoa-product content of 60%;
  • use only heavy cream, with a fat content of at least 30%;
  • watch out for the cream when heating - it can run away!

Ingredients:

  • 200 g chocolate (60% cocoa)
  • 200 ml of cream with a fat content of 30% (not less!)
  • 30 g butter
  • 4 tbsp. tablespoons of cocoa powder

You will also need:

  • saucepan for warming cream
  • mixing bowl
  • corolla
  • plate for cocoa powder
  • sturdy spoon

Be careful and remember to wear an apron as chocolate has one more amazing property- it stains everything around.

  1. Break the chocolate as finely as you can. Place in a bowl.
  2. Heat the cream to a simmer in a small saucepan (watch out, they may escape).
  3. Pour them over the chocolate.
  4. Stir thoroughly with a whisk, holding it upright, until the mixture is completely smooth and shiny.
  5. Add oil to warm mixture and stir again.

  1. Refrigerate bowl for 8 hours (overnight).
  2. Pour cocoa powder into a bowl. Take the pieces with a spoon, throw in the cocoa powder and roll the balls with your hands sprinkled with the powder.
  3. Fold ready-made candies in a box or vase, store in the refrigerator for no more than two weeks.

We prepare aromatic and delicious muffins and cupcakes at home. For children and with them!

I really love to bake cupcakes for children's parties. There are several reasons for this:

  • there are a great many recipes for such products, you can choose a new one every time;
  • this is a simple baking, which is obtained the first time by any, even not very experienced, hostess;
  • the dough can be enriched with any additives to taste and imagination: berries, fruits, chocolate, cocoa, dried fruits, etc .;
  • preparation takes and does not require "dancing with tambourines", and the result is always excellent.

And most importantly, kids love cupcakes.

Fragrant orange muffin

This sunny cupcake will leave no one indifferent! You can add a little bit of turmeric to the dough for a brighter color.

Ingredients:

  • 3 eggs,
  • 150 grams of butter (margarine),
  • 200 grams of flour (it may take a little more - about 250, depending on the variety),
  • 2 teaspoons of baking powder and vanilla sugar,
  • Orange,
  • bread crumbs or semolina.

Cooking cupcakes:

  1. Combine soft butter with vanilla and sugar, grind.
  2. Drive in the eggs.
  3. Squeeze the juice from the orange, peel off the zest (the orange part of the peel) with a sharp knife or vegetable peeler. Add chopped zest and juice to the butter and egg mixture.
  4. Add baking powder and sifted flour. Stir diligently.
  5. Grease the mold with oil. Lay out the dough.
  6. Sprinkle semolina or breadcrumbs on top of the cake.
  7. Bake in a preheated oven at 180 degrees for about 25 minutes. Willingness to control with a wooden stick.
  8. Take the baked muffin out of the oven and let it rest a little.
  9. Put the product on a dish, sprinkle with powdered sugar.

Airy sour cream cake

This cupcake is attractive because you can put anything in it. I prefer to add candied fruits or prunes. You can put fresh or dried berries, fruits, chocolate drops. Or add nothing and grease the finished cake with jam or sour cream.

Ingredients:

  • 3 eggs,
  • 200 grams of sugar and sour cream,
  • 400 grams of flour
  • 2 tsp baking powder,
  • additives to taste: berries, dried fruits, etc., a handful or two.

Sour cream cake recipe:

  1. Beat eggs until frothy. Add sugar and beat well again with a mixer (this process will take about 5 minutes).
  2. Add sour cream. Beat again, this time not for long.
  3. Sift flour, mix with baking powder.
  4. Add the egg-sour cream mass to the flour. Stir vigorously until the lumps disappear.
  5. Add the selected additives to the mass. Mix.
  6. Grease the mold with oil. Transfer the dough into it.
  7. Put in an oven preheated to 180 degrees and bake for 40 minutes.
  8. Let the cake cool directly.
  9. Put the product on a dish, decorate to taste.

Cupcakes

Cupcakes are small cupcakes baked in portioned tins and always decorated with some kind of cream. Outwardly, they resemble mini.

Cupcakes literally captivate children with their appearance... If there are a lot of guests, feel free to double or even triple all the ingredients. These muffins are snapped up in just 20 minutes.

Ingredients:

  • 2 eggs,
  • 200 grams of butter, sour cream, powdered sugar, flour,
  • 1.5 tsp baking powder,
  • 1 tsp vanilla sugar.

Preparation:

  1. Combine soft butter with powdered sugar and beat with a mixer.
  2. Add sour cream, beat again.
  3. Add eggs. Beat.
  4. Sift flour, add baking powder, vanilla. Pour liquid mass into dry ingredients, mix gently.
  5. You should have a thick dough. If you take it with a spoon and turn it over, the dough should not fall.
  6. Line out muffin cups (or metal ones for sand baskets) with special paper muffin cups. Fill the containers with dough about 2/3 full.
  7. Place the cupcakes in a cold oven. Set the temperature to 170 degrees. Bake for about 25 minutes. Readiness can be checked with toothpicks. The surface of the muffins should not brown too much.
  8. Cool the muffins, remove from the molds and decorate with cream.

If you want chocolate cupcakes, add a tablespoon of cocoa to the flour. You can also put fresh or frozen fruits, berries, chocolate pieces, citrus zest, nuts in the dough.

Any thick cream is suitable for cupcakes: butter, sour cream, custard, etc. My favorite thing is to decorate the muffins with whipped cream. If you have baked chocolate cupcakes, then the cream can be flavored with cocoa or chopped chocolate.

Kids love the multi-colored cupcakes. Therefore, I often tint the cream. For this purpose, you can use food coloring... But I am not a fan of treating children with such synthetic additives, so I only use natural dyes: spices, fruit or vegetable juices.

Cupcakes are decorated with cream using a pastry syringe, bag or cornet. When time is short, I just spread it out with a spoon and smooth it out with a fork in a circular motion.

On top of the cream, cupcakes can be decorated with grated waffles, coconut flakes, marmalade, candied fruits, berries, chocolate, confectionery sprinkles. Do not forget to dip fresh berries and fruits in gelatin so as not to wind up.
